I made this one today! Anxious to hear how everyone's turns out. I had something happen I've never seen before. It bubbled over in the oven but really just butter not the whole batter. Then when I took it out there was butter bubbling around it. I thought maybe I read the amount of butter wrong but used what it called for. Anxious to see how it tastes.
Julie, the same thing happened with some of my muffins. I think I let the butter cool off too much, cut I loved the crunchy exterior it created. Reminded me of the canneles.
For anyone who hasn't made this one yet, I made it three ways. My loaf tested done after 51 minutes. Regular muffins were done at 17 minutes and mini muffins were done after 10 minutes.
If you don't have access to shelled pistachios and/or hazelnuts, you could experiment with pecans, macadamias, etc. I haven't glazed or cut the loaf yet, but the minis are hard to resist. :-)

Mine is in the oven right this minute. Man that was a ton of butter!! I'm anxious to see what texture it has, etc.
ReplyDeleteI made this earlier in the month. Haven't had time to post the results. Will try and get it posted tomorrow (when I am off from Starbucks & houses!)
